Cheesy Creamy Crusty Mashed Potatoes

Last night I made a steak dinner for Valentine's Day. It was good. Not amazing, but a little above average. My steak didn't have the nice "crust" that I would've liked, and the salad dressing was just ranch. But what made the dinner was the potatoes. I was planning on just making basic mashed potatoes, but last minute I decided to fancy it up, and it came out delicious! With the thick, crunchy, yet pliable layer of cheese on top, and the creamy mashed potatoes underneath...

Cheesy Creamy Crusty Mashed Potatoes

Ingredients:

5 medium potatoes, peeled, diced
2-3 tablespoons butter (or more)
3 tablespoons milk
3 tablespoons cream cheese (optional, but highly recommended)
2 green onions, chopped
2 cups cheddar cheese
salt
pepper

Boil potatoes until tender.

Turn broiler on Hi.

Drain ALMOST all of the water..leaving a few tablespoons to mash in with potatoes (the starch water makes them creamier).

Mash potatoes, adding butter, cream cheese, and a few tablespoons of milk, to desired consistency. I like to mash it pretty well, yet have a few small chunks, like the restaurants do :) Salt and pepper to taste.

Mix in onions.

Put potatoes in shallow baking dish, and put cheese on top. Put the dish under the broiler for a few minutes, or until the cheese is really hot and bubbily, almost crusted. Watch carefully because the broiler gets really hot and can burn easily.

Next time, try adding a little horseradish to your mashed potatoes - that is the secret to Chef Kent's mashed potatoes at Chef's Table...

Personally, I don't like horseradish, but just a little in the potatoes makes them to die for!!

I make potatoes the exact same way, but instead of using green onion I add sage to it. Sagey Mashed Potatoes are the best!!!
